Black Bean & Corn Salsa

BLACK BEAN & CORN SALSA

  Part of our Signature Series, this recipe was originally made by our founder in the 1990's, in his commercial ranch kitchen located on the historic Morris Ranch in Fredericksburg TX.
 This handy - meal in a jar - is great for family camping adventures, fishing & hunting camps, and everyday meals.
  Its easy to use in layered dips or  simple chips & dip snacks!
  Keep extras in your pantry and add to all kinds of oven baked meats, or all-in-one meals. There's many options!

IDEAS
CHUCKWAGON SALAD DIP:  
  In a large bowl mix Texas Wild™ Black Bean and Corn Salsa (somewhat drained), add any preferred chopped foods such as: chopped bacon, diced avocados, chopped fresh jalapeños, chopped green onions, chopped fresh cilantro or parsley leaves.  Add a sprinkle of your favorite seasonings to taste: salt, pepper, or a bit of chili powder (or flakes).  Mix well, top it with some shredded cheese if desired, and enjoy a hearty, colorful, meal.  Grab some favorite tortilla chips & enjoy!

TRAILSIDE STUFFED PEPPERS:
Brown your preferred meat (seasoned Italian sausage, or ground beef to taste, etc) until meat is thoroughly cooked, drain grease, & set aside.  Prep large bell peppers (or your choice of peppers) by slicing in half and scooping out the insides. Blanch in boiling water for 2-3 minutes to soften them a bit.  Lay with opened side up into a baking dish and stuff with your meat that is pre-mixed with some Texas Wild™ Black Bean & Corn salsa. Optional: add a spoonful of cream cheese to the mix.  Sprinkle salt & pepper to taste.  Pour a little water into the bottom of the pan (up to 1 inch in height) and bake 30 minutes at 350° or until they are softened and cooked to your liking. Can top with your choice:  shredded cheese, chopped green onion, chopped parsley, or chopped cilantro. Many options!
